This week I’ll share mama’s Sujuk recipe. In other countries, Sujuk is a type of spiced sausage. It was introduced to the Syrian cuisine through the Armenian community. In Syria, rather than making the meat into sausage, it is cooked minced using similar spices. The main flavours are those of the spices and (lots of) garlic, with sweet pepper paste adding sweetness and holding the ingredients together. It’s a very simple recipe and doesn’t take that long to make!
Ingredients
500g minced lamb
½ tsp black pepper
1 tbsp seven spice
1 tbsp coriander seed powder
½ tsp dried ginger powder
½ tsp fenugreek seeds
½ tsp citric acid salt
salt to taste
4 tbsp sweet pepper paste
2 tbsp crushed garlic
1 tbsp cooking oil
pickles
bread (white finger rolls or panini)
Method
Add the cooking oil to a pan on medium-high heat and once hot add the crushed garlic and minced lamb, mixing well.
Once the meat has browned, add the spices, citric acid, and salt. Cook for about 5 minutes.
Add the sweet pepper paste and mix well with the meat. Leave on heat for 1 minute.
Spread the Sujuk mixture onto the bread and add pickles.
Grill the sandwiches in a panini press.
